RECIPE: Fresh Quinoa Salad

I think we can all agree that this weather is crazy hot and we don’t necessarily want to eat a huge meal – so why not opt for a nice quinoa salad?!

Well, lucky for you, I found this really great quinoa salad here and wanted to share it with you all.

First off, for the few of you who still don’t know what that trendy food is, well Quinoa is actually a seed with a huge amount of protein. It also has a great source of calcium, B vitamins and iron. You get it, it’s healthy af.

So for the salad, here’s what you’ll need:

  • Quinoa (1 cup)
  • 2 medium field cucumbers
  • 1 red bell pepper (tomatoes can work also if you’re not a bell pepper fan like me)
  • 1 red onion
  • 1 can of chick peas
  • A bunch of parsley

And for the dressing:

  • 2 lemons
  • 1/4 of olive oil
  • 1 tablespoon of red wine vinegar
  • Sea salt

Finally, here’s how you do it:

Quinoa is very simple to make – almost like basmati rice, you boil it (for one cup of quinoa, put two cups of water) and once it’s over you turn the temperature down to let it steam. You will know the quinoa is done cooking once it has absorbed all of the water, which should take 15 minutes ish. Once you’ve done this, put the quinoa aside and let it cool down.

In the meantime, dice all of your vegetables and put them in a serving bowl and make sure to mix the dressing in a separate bowl.

Once the quinoa is room-temperature you can toss it in the serving bowl, add the dressing and then mix it all up!

Personally, I really enjoyed doing it as it was something fun and new to make – it was my first time making quinoa and it tasted pretty good!
